Here is how you make Artisan Bread:

In a large bowl combine water, yeast and salt. Add flours. Mix with wooden spoon until combined. Cover bowl and let sit for 18 hours. Flour a plate, put goopy mess onto plate and let rest for 2 hours. If you want to cover with a towel, place a little flour on the top so the towel doesn't stick.Preheat oven, with a covered casserole dish in it. This is critical. Once the dish is hot, take it out, scoop the bread goop into it, cover it up and cook at 400 for 35-40 mins.This can be made as one large load (less servings) or 2 smaller loaves. Just cook each 'loaf' separately.NOTE: I mix this at night, sleep, do my thing and go to the next step late afternoon.
