Stir yeast and honey into warm water in mixer bowl. Set in warmed oven to proof for 5-10 min. Add oil, salt, and 7 cups flour. Knead with mixer (or by hand) for 10 min, gradually adding in remaining flour. Shape into two loaves and set in greased pans. Spray tops with cooking spray. Set in warmed oven to rise ~20-30 min. When doubled, increase oven temperature to 350F. Remove loaves from oven after 25-30 min, or when golden.
